No Oven Eggless Rose Malai Cake
This is an absolute fusion of East meets West. Have it cold - No Oven Eggless Rose Malai Cake
Ingredients:
To Make Rose Cake Base
1/4th Cup Oil (or 80 gram butter)
1/2 cup castor sugar (Or normal sugar crushed in pulse mode in mixie)
2 spoon rose syrup
1/2 cup milk
1 cup maida (Plain flour)
1 tsp baking powder
1/2 tsp baking soda
Grease baking bowl with oil and dust with maida
(no need for pachment or butter paper)
To make rabri texture liquidy malai
1 cup milk
2 spoon of milk and mix 2 tbs milk powder (optional)
1.5 tbs condense milk (Alternative 2 tbs sugar)
Rose syrup 1 tbs
pistachio, cashews and fresh rose petals for garnishing
Method:
First Make Cake Base
take 1/4th Cup Oil (or 80 gram butter)
Avoid Peanut oil or Sesame oil
Add 1/2 cup castor sugar (Or norma sugar crushed in pulse mode in mixie)
Whisk it with spoon or beater
Add 2 spoon rose syrup and mix well
Add 1/2 cup milk in parts and keep mixing and melting sugar
Take 1 cup maida (Plain flour)
add 1 tsp baking powder into maida
Add 1/2 tsp baking soda
Make sure Maida is sieved properly
Now add dry ingredients into wet ingredients gradually
keep adding milk and mixing
Keep oven ready 180 degree pre-heat for 10 minutes
I have also kept the vessel on gas with salt base pre-heat for same time
Batter is ready
Grease baking bowl with oil and dust with maida
(no need for pachment or butter paper)
Pour batter in the mould and fill upto 3/4th as cake will rise
You can take any shape or size mould
1 cake pan, I am keeping in oven
and another cake pan on gas in the
Cover the lead and bake for 25 - 30 min
Cake in oven should be baked for 20 min
A small cup cake would get baked in 10 min in oven
Next we make rabri texture liquidy malai
In a pan, take 1 cup milk
Heat it up till you get a boil
Take 2 spoon of milk and mix 2 tbs milk powder to make milk thicker faster
If you don’t have milk powder then boil milk longer to make it thick
Add milk powder into milk and keep stirring milk
Add 1.5 tbs condense milk
(Alternative 2 tbs sugar)
If you add sugar then you will have to boil milk longer as sugar releases water
Once milk gets thicken, bring it to room temperature
Take out cake from oven and keep aside
As milk cools down, the thick malai layer on top you need to gently stir and mix back in milk so you will get grainy texture
Repeat the process every time you see malai on top
Add rose syrup 1 tbs into milk and mix
Gently mix it
Randomly poke holes in the cake so that when we add milk on top; it goes inside the cake
Drizzle the rose malai mix on top
Garnish with pistachio, cashews and fresh rose petals
We want milk to be absorbed inside the cake
Leave cake inside fridge for 1 hour
